Old school difference

The recipe is great but there is a couple of changes my mom and grand mom did. So if you want to spend a little extra effort this is what they did.
When you shred the potato and onions catch them in a sieve over a bowl to catch all the water. Squeeze the mixture against the sieve to get as much moisture out as you can. When your done wait a minute then slowly poor the water out of the bowl what you have left on the bottom of the bowl is the starch from the potato's. Add the potato and onion mix to the bowl and mix well to get the starch back in. Also take your eggs and separate the egg yolk and the white. Whip the white in to a stiff foam. Add all the ingredients and mix well then as the last item fold in the egg whites.
