my childhood lunch

by Sandy
(Florida USA)

Wonderful memories....When I was in elementary school I would walk home for lunch. My Oma lived with my family and everyday she made potato soup for lunch.I never tired of it. It was always steaming warm and waiting for me with a piece of pumpernickel smeared with Neufchatel Cheese and Apple Butter. The only seasoning difference with my Oma's soup was that she put caraway seeds in the soup. Also she would puree half of the soup....she left nice chunks of potatoes and carrots for us kids in it. I will be making it for my grandchildren now.
