Schweinebraten Recipe
(Pork Loin Roast)


This simple Schweinebraten recipe results in a tender and juicy pork loin roast with drippings that make a perfect sauce for both the pork and any dumplings or potatoes served alongside .

Seering the roast well on all sides is important in locking in the juices and ensuring a tender and succulent Schweinebraten. Don’t forget to seer the ends of the pork loin as well.

Try adding a can of drained sauerkraut to the baking pan along with the sliced onion for an easy side.



Ingredients:

One 3-4 lb Pork Loin

Salt and Pepper

2 Tbsp Oil

2 Large White Onions

3/4 Cup Vegetable Broth

2 Cups Water



Instructions:

Preheat oven to 350F (175C)

Clean Pork Loin well with cold water
Rub Pork liberally on all sides with Salt and Pepper
Seer Pork for 1-2 minutes on each side in a Hot Skillet

Spread Oil in Baking Pan
Place seered Pork Loin in center of Oiled Pan
Peel and Slice Onions
Scatter Onions in Pan around Pork Loin
Pour Broth over Onions
Add Water to Pan

Bake at 350F for 3 1/2 to 4 hours, tuning and basting roast every 30 minutes

Remove Pan from oven
Move Roast to clean cutting board
Slice in 1/2 to 1 inch thick slices
Place slices on serving plate and top with Onions from Pan
Pour remaining liquid from Pan into gravy boat
Serve
