Lentil Soup Recipe
(Linsensuppe)


This lentil soup recipe makes for a delicious start to any meal. The high protein content of lentils has made them a staple in the diet of many vegetarians and vegans, but everyone can appreciate their rich flavor and ease of preparation.

Linsensuppe Recipe



Ingredients:

1/2 lb of dried Lentils

6 cups of Water

1 medium White Onion

1 clove of Garlic

2 medium Carrots (yellow carrots if available)

1 stalk of Celery

Sprig of Parsley

3 Tbsp of Lard or Butter

1 slice of Bacon

3 Tbsp of Flour

1 Tbsp of Vinegar

Salt and Pepper to taste



Instructions:

Rinse Lentils and soak in 6 cups Water overnight

Dice Onion
Wash and slice Carrots and Celery
Crush or press Garlic
Add Onion, Carrots, Celery, Garlic and whole Parsley to Lentils and Soak Water
Bring to a boil and cook until Lentils are tender

Heat Lard (or Butter) and finely cut Bacon in skillet
Add Flour to skillet and stir until light brown
Slowly stir 2 cups of soup broth into skillet mixture
Stir until smooth and bring to boil
Add skillet mixture to soup pot
Add Vinegar
Salt and Pepper to taste
Bring soup to a boil
Serve
